INGREDIENTS
- 1 Thomas english muffin, split
- 1 egg, fried and yolk broken
- 1 slice Canadian bacon
- 1 slice American cheese
- 1 tbsp salted butter
- 2 slices cooked bacon
- 1/2 avocado, sliced
- black pepper, pinch
DIRECTIONS
- Using a large non-stick frying pan, heat pan over medium level. When pan is hot, add butter and fully melt it.
- Cut and split english muffin into halves. Toast both sides of muffin until golden brown. Transfer to a serving plate.
- Add Canadian bacon. Cook both sides until golden brown. Remove bacon from heat. Set aside.
- Cook bacon until golden brown. Set aside.
- Break egg and add to remaining side of pan. Cook for 30 seconds. Flip egg to other sides, break the egg yolk.
- Place cooked egg on one side of english muffin. Add American cheese, Canadian bacon, sliced avocado and bacon.
- Sprinkle pinch of black pepper.
- Fold english muffin with top piece. Ready to serve.
