Vinnie’s Lobster Rolls

INGREDIENTS
  • 1 lb lobster meat
  • 1/4 cup mayonnaise
  • 1/2 red onion, finely chopped
  • 1/2 lemon, zest and juice
  • 1/2 tbsp fresh parsley, finely chopped
  • 1/8 tsp black pepper
  • 1/2 tbsp fresh chives, finely chopped
  • 1 tbsp fresh cilantro, finely chopped
  • 2-4 hot dog buns
  • 4 tbsp salted butter, divided
  • Chopped scallion (garnish)

DIRECTIONS

  1. 1.
    Using a small bowl, mix mayonnaise, red onion, lemon zest, lemon juice, chopped parsley, chopped chives, chopped cilantro, black pepper. Set aside.
  2. 2.
    In a small sauce pan, melt 2 tbsp salted butter over low heat. Add lobster meat into butter and warm it for 2-3 minutes (Careful not to over cook).
  3. 3.
    Add spices/herbs from Step 1. Mix well with lobster meat. Set aside.
  4. 4.
    In a separate frying pan, melt remaining butter. Cook hot dog buns in butter until golden brown on both sides.

    Serve lobster meat in buns. Sprinkle with chopped scallion, black pepper and lemon as needed.
