INGREDIENTS
- 1.5 - 2 lbs chicken tenders, cleaned and rinse over cold water
- 6 tbsp all-purpose flour
- 4 large eggs, beaten
- Pam cooking spray
DIRECTIONS
- Prepare chicken tenders brining solution with 4 cups of cold water, 2 tbsp Kosher salt, 1 tbsp sugar. Whisk well until to resolve all salt and sugar. Add chicken tenders and soak for 30 minutes to 1 hour.
- Prepare Seasoning Mix ingredients (See below). Set aside.
- Make batter by mixing eggs, flour, 2 tbsp cold water and 2 tsp Seasoning Mix (See below). Whisking well until smooth texture. Set aside.
- Prepare breading mix ingredients (See below). Set aside.
- Remove chicken tenders from brining water and pat dry with paper towel.
- Dip chicken tenders into egg/flour mixture and then into the Panko breading mix on both sides.
- Spray air frier with Pam cooking spray. Select cooking option via air frier or via oven bake below.
- Option 1 via air frier: Preheat air frier at 400 degrees F. When ready, add chicken tenders and cook for 8 minutes. Flip chicken tenders and cook for another 5-6 minutes until golden and crispy.
- Optional 2 via oven bake: Preheat oven to 400 degrees F. Bake chicken tenders for 40 minutes until crispy and golden.
Seasoning Mix
INGREDIENTS
- 1 tbsp mushroom seasoning
- 1/2 tsp Merlot salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cayenne pepper
- 1/2 tsp dry parsley flakes
DIRECTIONS
- Using a small bowl, combine Seasoning Mix ingredients (See above).
Breading Mix
INGREDIENTS
- 3 cups Panko Breadcrumbs
- 3 tsp Seasoning Mix
DIRECTIONS
- Using a large mixing bowl, combine Panko Breadcrumbs and 3 tsp Seasoning Mix. Mix well.
