INGREDIENTS
- 3 lbs boneless chicken breasts
- 1 tbsp onion powder
- 1 tsp garlic powder
- 1/2 tbsp dry diced onion
- 1/2 tbsp dry minced garlic
- 1/2 tsp chicken boullion seasoning
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh parsley, diced
- 1 tbsp fresh garlic, diced
- 1 tsp mushroom seasoning
- 1/8 tsp black pepper
DIRECTIONS
- Rinse chicken over cold water. Remove excess fat. Pat chicken dry with papertowel.
- Flatten chicken breast pieces with a meat beater into roughly 1/4" thick. Cut chicken breasts into halves. Set aside.
- Place chicken into a large mixing bowl. Add olive oil, garlic powder, diced garlic, onion powder, diced dry onion, chicken bouillion seasoning, diced parsley. Mix well and marinated chicken for at least 4 hours or better overnight.
- Prepare cheese flour mix as described in Part 1, Part 2 and Part 3 below.
- Dip chicken pieces into Part 1 (flour), Part 2 (eggs) and Part 3 (parmesean cheese). Place cheesy chicken pieces into baking sheet.
- Add 1/2 cup of olive oil to a non-stick frying pan. Bring oil to hot over medium heat. Add chicken and cook 1-2 minutes on each side until golden brown on each side. Set aside.
- Using a separate large frying pan, bring 1 tbsp olive oil to hot over medium heat. Add fresh diced garlic until golden brown. Add sweet onion, cook for 1-2 minutes. Add tomatoes and cook for another 1 minute.
- Add marinara sauce into pan. Add fresh chopped parsley, onion powder, garlic powder, minced dry onion, chives, basil, sugar. Mix well and remove from heat.
- Cook spaghetti, linguini or angel hair noodles el dente per box instructions.
- Serve chicken over cooked noodles. Add marinara sauce over chicken and noodles. Sprinkle chopped scallion as garnish.
Cheese Flour Mix
INGREDIENTS
- Part 1: 3/4 cup flour, 1/4 tsp merlot salt, 1/2 tsp black pepper
- Part 2: 4 whisked eggs
- Part 3: 12 oz shedded parmesean cheese
DIRECTIONS
- Using separate mixing bowls, prepare Part 1, Part 2 and Part 3 of cheese flour mix. Set aside.
Marinara Tomatoes Sauce
INGREDIENTS
- 1 sweet onion, chopped
- 2 large tomatoes, chopped
- 2 marinara sauce jars (96 oz)
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 tsp fresh garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tsp chives
- 1/2 tsp basil leaves
- 1/8 tsp sugar
- 1 tsp dry minced onion
DIRECTIONS
- Prepare marinara tomatoes sauce as described in Step 7 and Step 8 above.
