Vinnie’s Breakfast Bowl

INGREDIENTS
  • 2 eggs
  • 3 maple breakfast sausage links
  • 4 oz hash browns
  • 1/4 cup Swiss cheese
  • 1 tbsp scallion (green part), chopped
  • Pinch of black pepper

DIRECTIONS

  1. 1.
    Cook maple sausage over medium heat until golden brown (5-10 minutes). Cut sausage into small pieces. Set aside.

    Toast hash brown in toaster until crispy. Cut hash brown into small pieces. Set aside.

    Fry 2 eggs in butter. Break the yolks and flip eggs on both sides. Add Swiss cheese and cook until cheese melt. Transfer cooked eggs and cheese into a serving bowl. Use a knife to cut fried eggs into small pieces. Add cooked sausage and hashbrown to eggs. Mix all ingredients together.

    Sprinkle black pepper and top off with chopped scallions.
