INGREDIENTS
- 2 eggs
- 3 maple breakfast sausage links
- 4 oz hash browns
- 1/4 cup Swiss cheese
- 1 tbsp scallion (green part), chopped
- Pinch of black pepper
DIRECTIONS
- Cook maple sausage over medium heat until golden brown (5-10 minutes). Cut sausage into small pieces. Set aside.
- Toast hash brown in toaster until crispy. Cut hash brown into small pieces. Set aside.
- Fry 2 eggs in butter. Break the yolks and flip eggs on both sides. Add Swiss cheese and cook until cheese melt. Transfer cooked eggs and cheese into a serving bowl. Use a knife to cut fried eggs into small pieces. Add cooked sausage and hashbrown to eggs. Mix all ingredients together.
- Sprinkle black pepper and top off with chopped scallions.
