INGREDIENTS
- 2 eggs
- 2 maple breakfast sausage links
- 2 strips of bacon
- 4 oz hash browns
- 1/4 cup Swiss or American or Guyere cheese
- 1/2 half avocado, peeled and sliced
- 1 tbsp scallion (green part), chopped
- Pinch of black pepper
DIRECTIONS
- 1.Cook maple sausage over medium heat until golden brown (5-10 minutes). Cut sausage into small slices. Set aside.
- 2.Cook bacon until crispy brown, cut into small chunks
- 3.Toast hash brown in toaster until crispy on broil for 12 minutes. Flip hash brown at 6 minutes mark. Cut hash brown into small pieces. Set aside.
- 4.Fry 2 eggs in butter. Break the yolks and flip eggs on both sides. Add cheese and cook until cheese melt. Transfer cooked eggs and cheese into a serving bowl. Use a knife to cut fried eggs into small pieces. Add cooked bacon, sausage and hashbrown to eggs. Mix all ingredients together.
- 5.Add avocado to bowl.
- 6.Sprinkle black pepper and top off with chopped scallions.
