Vinnie’s Breakfast Bowl

INGREDIENTS
  • 2 eggs
  • 2 maple breakfast sausage links
  • 2 strips of bacon
  • 4 oz hash browns
  • 1/4 cup Swiss or American or Guyere cheese
  • 1/2 half avocado, peeled and sliced
  • 1 tbsp scallion (green part), chopped
  • Pinch of black pepper

DIRECTIONS

  1. 1.
    Cook maple sausage over medium heat until golden brown (5-10 minutes). Cut sausage into small slices. Set aside.

    Cook bacon until crispy brown, cut into small chunks
  3. 3.
    Toast hash brown in toaster until crispy on broil for 12 minutes. Flip hash brown at 6 minutes mark. Cut hash brown into small pieces. Set aside.

    Fry 2 eggs in butter. Break the yolks and flip eggs on both sides. Add cheese and cook until cheese melt. Transfer cooked eggs and cheese into a serving bowl. Use a knife to cut fried eggs into small pieces. Add cooked bacon, sausage and hashbrown to eggs. Mix all ingredients together.

    Add avocado to bowl.

    Sprinkle black pepper and top off with chopped scallions.
