Traditional mayonaise for making Vietnamese sandwiches (Banh Mi)

INGREDIENTS
- 3 eggs (yolk only), bring to room temperature
- 1/2 cup vegetable oil
- 1 large shallot onions, sliced
- 2 large cloves fresh garlic, peeled and smash
- 1/4 tsp sea salt
DIRECTIONS
- 1.Using a non-stick frying pan, heat up oil on medium-high heat. Add garlic and shallot onions. Fry until golden brown. Remove from heat and let oil cool to room temperature.
- 2.Separate 3 eggs to obtain only the yolk in a large mixing bowl. Whisk the yolks until smooth and pale yellow.
- 3.Slowly add the oil continuously and continue to whisk until you have a thick mixture. Season with sea salt. End results should have approximately 3/4 cup of mayonaise. Store in refrigerator. Best to use within 3 days.
