Vietnamese Mayonaise

Traditional mayonaise for making Vietnamese sandwiches (Banh Mi)

INGREDIENTS
  • 3 eggs (yolk only)
  • 1 cup vegetable oil
  • 1 tsp garlic powder
  • Pinch of salt

DIRECTIONS

  1. 1.
    Separate 3 eggs to obtain only the yolk in a large mixing bowl.
  2. 2.
    Use a hand mixer with a whisk attachment to whisk the egg yolk while slowly add 1/2 cup of vegetable oil. Mix well until thickens.
  3. 3.
    Add remaining 1/2 cup of vegetable oil and continue to whisk.
  4. 4.
    Add 1 tsp garlic powder and pinch of salt. Continue to whisk until mixture becomes smooth paste. Mayonaise can be stored in an air tight container in refrigerator.
