Vietnamese Cold-Cut and Pork Sandwich

Traditional Vietnamese cha Lua and Char Sieu pork Banh Mi sandwiches.

INGREDIENTS
  • Vietnamese baguette Banh mi bread
  • 6 oz Vietnamese cold-cut (Cha Lua), sliced
  • 1.5 oz liver pate
  • 1/3 cucumber
  • 1 bunch of cilantro, cleaned
  • 2 tbsp sweet onion, thinly sliced
  • 4 tbsp Vietnamese mayonnaise
  • Seasoning sauce (Maggi Seasoning)
  • Sprinkle black pepper
  • chili pepper, sliced

DIRECTIONS

  1. 1.
    Make Vietnamese mayonnaise per instructions in "Sauces" section of La Cuisine De Chau cookbook.
  2. 2.
    Make Carrots & Daikon pickles per instructions in "Side Dishes" section of La Cuisine De Chau cookbook.
  3. 3.
    To assemble each Banh Mi sandwich, slice baguette on its side (but not all the way through the bread), remove some of inside baguette filling. Spread liver pate on one side, Vietnamese mayonnaise on the other side, add few drops of Maggi seasoning sauce, add sliced pork, cold-cut (cha lua) slices, sliced onion, cucumber, carrots & daikon pickles, sliced chili pepper, 3-4 stems of cilantro, sprinkle of black pepper.
Char Sieu Grilled BBQ Pork
INGREDIENTS
  • 1 lb pork loin or pork belly
  • 2.5 oz Char Sieu red pork seasoning powder
  • 1/2 cup warm water
  • 1/2 tbsp garlic powder
  • 1/2 tbsp onion powder
  • 1 tbsp sesame oil
  • 1/2 tsp black pepper

DIRECTIONS

  1. 1.
    Clean pork over cold water. Using a sharp knife, poke holes on all sides of pork for marinade to absorb into the meat.
  2. 2.
    Mix dry marinade with 1/2 tbsp garlic powder, 1/2 tbsp onion powder, 1/2 tsp black pepper. Sprinkle and massage dry marinade on all sides of pork.

    Mix wet pork marinade using a mixing bowl. Add 2.5 oz Char Sieu red pork seasoning powder, 1/2 cup of warm cold water, 1 tbsp sesame oil. Mix well.
  4. 4.
    Place pork into a large ziplock bag. Pour in wet marinade. Mix well and massage marinade all over pork. Store in refrigerator overnight.

    when ready to cook, pre-heat oven to 360 Deg F.
  6. 6.
    Cook pork in oven for 20 minutes. After 20 minutes, baste pork with left over wet marinade mixture. Put back in oven and cook for another 20 minutes.
  7. 7.
    After 20 minutes, baste pork with left over wet marinade mixture for 2nd time. Put back in oven and cook for another 20 minutes. Total cooking time for pork is 60 minutes.

    Remove pork from oven. Let it rest for 10 minutes. Once cooled, cut pork into slices. Set aside.
