Vietnamese Coconut Pandan Sticky Rice (Xoi La Dua)

INGREDIENTS
  • 2 cups (Glutious or sweet) rice
  • 1 tsp salt
  • 1/2 pandan extract
  • 1/4 cup shredded young coconut, divided
  • 1 cup coconut milk
  • 3 tbsp roasted sesame seeds
  • 1 tbsp sugar

DIRECTIONS

    Wash rice in cold water until water no longer cloudy. Soak rice submerged in water overnight.
  2. 2.
    When ready to cook, drain rice and transfer to a rice cooker. Add 1/2 tsp salt, 1/4 tsp pandan extract, 2 tbsp shredded young coconut, 1 cup coconut milk. Mix well.

    Cook rice in cooker until done. Note: if rice is not cooked after 1 cycle, fluff rice using a chopstick, cover rice with parchment paper and turn on rice cooker again for 2nd cycle.

    Crush roasted sesame seeds in a mortar and pestle. Add 1 tbsp sugar and 1/2 tsp sugar. Set aside.

    After rice is done, transfer to serving plate. Sprinkle sesame mix on top and garnish with more shredded young coconut.
