Ultimate Green Bean Casserole

INGREDIENTS
  • 6 strips bacon
  • 1/2 sweet onion, finely diced
  • 1+1/2 cups mushroom, chopped
  • 3 cloves garlic, minced
  • 2 x 10.5 oz cans cream of mushroom
  • 1/2 cup milk
  • 1 cup shredded Monterey Jack cheese
  • Pinch of salt and pepper to taste
  • 4 x 14.5 oz cans cut green beans, drained
  • 1+1/2 cups French fried onions
  • 1/2 cup shredded Parmesan cheese

DIRECTIONS

  1. 1.
    Preheat oven to 350 Deg F and lightly spray a 9"x13" baking dish with Pams cooking spray.
  2. 2.
    Using a large skillet, cook bacon over medium heat until crisp. Remove to drain on paper towel, then crumble. Save bacon grease.
  3. 3.
    Heat 2 tbsp of saved bacon grease on same skillet over medium heat. Add onions and cook for 4-5 minutes or until translucent. Stir frequently.
  4. 4.
    Add mushroom and cook for another 4-5 minutes or until mushroom is golden brown. Add garlic and cook for another 1 minute.

    Stir in mushroom soup and add crumbled bacon to skillet. Stir to combine. Add milk, cheese and stir until cheese is melted. Add salt and black pepper to taste. Add green beans to skillet. Mix well.
  6. 6.
    Pour mixture into prepared serving dish. Top mixture with Parmesan cheese, fried onions and bake uncovered for 30 minutes or until casserole is hot and bubbly. Ready to serve.
