INGREDIENTS
- 2 cans sweet corn niblets
- 1/2 large red onion, minced
- 1 pint cherry tomatoes, chopped in half
- 2 avocados, chopped into chunks
- 1 bunch cilantro
- 1 lime
- Salt and pepper to taste
DIRECTIONS
- Mix corn and all vegetables in bowl and season with salt and pepper.
- Squeeze lime over.
- Refrigerate until ready to serve.
