Spinach Balls

INGREDIENTS
  • 2 pkg frozen chopped spinach
  • 4 eggs, beaten
  • 2 cups herb stuffing (packaged)
  • 1/2 cup Parmesan cheese
  • 1 garlic clove, minced
  • 1 onion, chopped
  • 1 1/2 tsp thyme
  • 3/4 cup butter, melted
  • Salt & pepper

DIRECTIONS

  1. 1.
    Cook spinach according to package; drain and squeeze dry.
  2. 2.
    Mix together all ingredients.
  3. 3.
    Chill for 2 hours.
  4. 4.
    Preheat oven to 300 degrees.
  5. 5.
    Roll into 1 inch balls and place on cookie sheet.
  6. 6.
    Bake for 30 minutes.
  7. 7.
    Can be made ahead of time and frozen; freeze on cookie sheet; once frozen store in plastic bags until needed; thaw before baking.
