INGREDIENTS
- 2 pkg frozen chopped spinach
- 4 eggs, beaten
- 2 cups herb stuffing (packaged)
- 1/2 cup Parmesan cheese
- 1 garlic clove, minced
- 1 onion, chopped
- 1 1/2 tsp thyme
- 3/4 cup butter, melted
- Salt & pepper
DIRECTIONS
- Cook spinach according to package; drain and squeeze dry.
- Mix together all ingredients.
- Chill for 2 hours.
- Preheat oven to 300 degrees.
- Roll into 1 inch balls and place on cookie sheet.
- Bake for 30 minutes.
- Can be made ahead of time and frozen; freeze on cookie sheet; once frozen store in plastic bags until needed; thaw before baking.
