INGREDIENTS
- 1 lb boneless pork
- 2 oz rice bean threads
- Dumpling wrappers (Gyoza)
- 1 tbsp mushroom seasoning
- 2 tbsp corn starch
- 1/2 lb raw shrimp, deshelved and deveined
- 1 tbsp onion powder
- ½ tbsp minced garlic
- 1/4 cup chopped scallion
- 1/8 cup minced fresh parsley
- 1/2 tsp black pepper
- 2 eggs
- 1/2 tbsp diced ginger
- 2 tbsp sesame oil
- 1 large sweet onion
DIRECTIONS
- Soak rice bean threads in cold water, submerged for 1 hour.
- Chop scallion, dice ginger, cut sweet onion.
- Clean and cut excess fat from pork. Cut pork into small pieces (1/4” each). Grind meat in a food processor until very fine. Set aside.
- Grind shrimp until fine using the food processor. Set aside.
- Grind sweet onion in a food processor until fine. Set aside.
- Drain rice bean threads. Squeeze bean threads to rid of excess water. Set aside.
- Using a large mixing bowl, add ground pork, ground shrimp, chopped sweet onion, corn starch, onion powder, chopped scallion, black pepper, diced ginger, mushroom seasoning, minced garlic, minced parsley, 2 eggs, sesame oil, rice bean threads. Mix all ingredients together.
- Using dumpling maker (4 inches/10cm), cut dumpling wrappers using the sharp end.
- Add a tbsp of dumpling filling from Step 7 onto dumpling wrappers. Fold dumpling maker together and squeeze to make the dumplings. Repeat step to make the dumplings using the rest of the filling.
- Steam the dumplings using a dim sum steamer for 6-8 min on high heat. Remove steamed pork dumplings and ready to serve.
- For pan fried pork dumplings, bring 2 tbsp vegetable oil to hot in a non-stick frying pan over medium heat. Add the pork dumplings. Cook for approximate 1-2 min on each side or until golden brown. Remove dumplings from heat to cool for 5 minutes. Ready to serve.
Dumpling Sauce
INGREDIENTS
- 4 oz dipping sauce (Gyoza)
- 1/2 tbsp sesame oil
- 1 tsp chili hot oil pepper
- 1/2 tbsp rice vinegar
- 1/2 tsp sugar
- 1 tsp scallion, chopped
- Sriracha
- 1/8 tsp black pepper
DIRECTIONS
- Using a small bowl, add dipping sauce, sesame oil, chili hot oil pepper, rice vinegar, sugar. Stir ingredients well.
- Stir in sesame oil, black pepper and scallion to mix. Add Sriracha to sauce. Ready to serve.
