Matcha Oreo Blondies

INGREDIENTS
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp fine sea salt
  • 1/4 tsp baking powder
  • 4 tbsp Matcha powder
  • 3/4 cup butter, melted
  • 1 1/3 cups light brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 2 cups crushed Oreos (plus extra cookies for topping)

DIRECTIONS

    Preheat the oven to 350 degrees. Line an 8-inch square pan with parchment paper and set aside.

    In a small bowl, combine the flour, salt, baking powder, and Matcha powder.
  3. 3.
    In a separate bowl, stir together the melted butter, light brown sugar, whole egg, egg yolk, and vanilla extract.
  4. 4.
    Add the flour mixture and crushed up Oreos and stir until just combined.
  5. 5.
    Press the Matcha blondie batter into the pan, top with extra Oreos, and bake for 25-30 minutes. A toothpick inserted into the center should come out clean or with a couple moist crumbs on it.

    Let it cool completely before cutting into squares and serving.
