Maine Crabmeat Breakfast Pie

INGREDIENTS
  • 8 large eggs
  • 1/2 cup scallions (about 6), finely chopped
  • 1 large red bell pepper, diced
  • 6 oz crabmeat, torn into shreds
  • 1 cup Swiss cheese, shredded
  • 1 cup Cheddar cheese, shredded
  • 2 cups half-and-half
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 1 cup fresh bread crumbs (3 slices white bread)
  • Butter for pan

DIRECTIONS

    Preheat oven to 350 degrees.
  2. 2.
    Grease a 10-inch quiche pan.
  3. 3.
    Whisk eggs until blended. Add remaining ingredients and stir to mix well.
  4. 4.
    Pour into prepared pan, and bake until set approximately 40 minutes.
  5. 5.
    Let stand 10 minutes; cut into pie-shaped pieces, garnish with scallions and serve hot.

    Good served with broiled tomatoes halves in the winter or cold sliced tomatoes in the summer.
