INGREDIENTS
- 2/3 cup sugar
- 3 tbsp all-purpose flour
- 1 tsp grated lemon rind
- 1 cup 2% low-fat milk
- 1/4 cup lemon juice
- 2 egg yolks, lightly beaten
- 2 egg whites
DIRECTIONS
- Preheat oven to 325 degrees.
- Combine first 6 ingredients in a bowl; stir with a wire whisk.
- Beat egg whites (at room temperature) at high speed of an electric mixer until stiff peaks form. Gently fold egg whites into milk mixture.
- Pour mixture into a 1-quart baking dish; place in a large, shallow pan. Add hot water to larger pan to a depth of 1 inch.
- Bake for 55 minutes or until golden.
- Remove dish from water; let stand 10 minutes and serve.
