Lemon Sponge Pudding

INGREDIENTS
  • 2/3 cup sugar
  • 3 tbsp all-purpose flour
  • 1 tsp grated lemon rind
  • 1 cup 2% low-fat milk
  • 1/4 cup lemon juice
  • 2 egg yolks, lightly beaten
  • 2 egg whites

DIRECTIONS

  1. 1.
    Preheat oven to 325 degrees.
  2. 2.
    Combine first 6 ingredients in a bowl; stir with a wire whisk.
  3. 3.
    Beat egg whites (at room temperature) at high speed of an electric mixer until stiff peaks form. Gently fold egg whites into milk mixture.
  4. 4.
    Pour mixture into a 1-quart baking dish; place in a large, shallow pan. Add hot water to larger pan to a depth of 1 inch.

    Bake for 55 minutes or until golden.

    Remove dish from water; let stand 10 minutes and serve.
