French Onion Smothered Pork Chops

INGREDIENTS
  • 3 large sweet onions, thinly sliced
  • 4 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 1 1/4 cup chicken broth
  • 4 boneless pork chops
  • 1/2 tsp basil infused sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 tbsp mushroom seasoning
  • 4 cloves minced fresh garlic, divided
  • 1/4 tsp garlic powder
  • 4 slices of Provolone cheese
  • 1 1/4 cup Gruyere cheese
  • 4 sprigs of fresh rosemary (garnish)

DIRECTIONS

  1. 1.
    Using a large skillet, melt butter on medium heat. Add minced garlic and cook until golden brown.
  2. 2.
    Add sliced onion to skillet. Cook for about 10 minutes or until onions are caramelized and turn brown. Careful not to burn onions.
  3. 3.
    Add 1/4 cup of chicken broth to skillet, stir well for 1 minute. Remove from heat. Transfer onion to a large bowl. Set aside.
  4. 4.
    Mix marinade spices by combining salt, black pepper, dried thyme, garlic powder, mushroom seasoning. Season both sides of pork chops with marinade mix.
  5. 5.
    Using same skillet, melt butter. Add remaining minced garlic and cook until golden brown. Add pork chops to skillet and sear each side until golden for about 6 minutes. Remove from heat and transfer pork chops to another large bowl. Set aside.
  6. 6.
    Loosen golden bits on skillet with 1 tbsp of chicken broth. Add onion back to skillet with the flour. Cook for few minutes, stir often.
  7. 7.
    Add chicken broth, stir to combine and bring to a boil.
  8. 8.
    Preheat oven to broil setting.
  9. 9.
    Reduce heat, add pork chops to skillet and cook for 15 minutes while spooning the liquid over the top. The liquid should thicken up while cooking.
  10. 10.
    Remove pork shops from skillet and place in a 9"x13" glass baking dish. Pur the sauce from skillet into baking dish and over the pork chops.
  11. 11.
    Lay a slice of provolone cheese over top of each pork chop. Sprinkle the Gruyere cheese over the tops of Provolone slices.
  12. 12.
    Put baking dish into the oven on broiler setting to melt the cheese and bring it to a golden colour on top (approximately 8-10 minutes). Remove baking dish from oven.
  13. 13.
    Sprinkle fresh rosemary leaves from the sprigs over the top of baking dish for garnish. Ready to serve with mashed potatoes and veggies.
