Vietnamese Fish Sauce (Nuoc Mam)

INGREDIENTS
  • 4 tsp sugar
  • 12 tsp hot water
  • 4 tsp fish sauce
  • 1 tsp lime juice
  • 1 tsp rice vinegar
  • 1 tsp hot chili pepper
  • 1 tsp fresh garlic, minced
  • 2 cloves fresh garlic
  • 1 carrots, julienne cut

DIRECTIONS

  1. 1.
    Heat a pot of water to boil and keep it hot under low heat.
  2. 2.
    Measure sugar, hot water, fish sauce, lime juice and rice vinegar as listed above. Stir or whisk until sugar is fully dissolved.
  3. 3.
    Repeat Step 2 using same mix ratios until the desired quantity.
  4. 4.
    Peel and slice fresh garlic.
  5. 5.
    Clean and julienne cut carrot
  6. 6.
    Add minced garlic, hot chili pepper, sliced garlic and carrot to fish sauce. Ready to serve. Fish sauce can be refrigerated and good for one month.
