INGREDIENTS
- 1 lb ground turkey or ground pork
- 2 sweet or shallot onions, julienne cut
- 1/2 green cabbage, finely shredded
- 1/8 red cabbage, finely shredded
- 2 cloves fresh garlic, minced, divided
- 1/2 tsp mushroom seasoning
- 1 tsp fresh ginger, julienne cut
- 1 tsp vegetable oil
- 1 tsp mushroom soy sauce
- 1 tsp dark soy sauce
- 2 tbsp sesame oil, divided
- 2 tsp seasoning sauce (Golden Mountain), divided
- 1 tsp oyster sauce
- 1 egg
- 1/4 tsp sugar
- 1/4 tsp black pepper
- Garnish: chopped scallion, fried onions, bean sprouts, cilantro, siracha
DIRECTIONS
- 1.Place ground turkey or ground pork in a large mixing bowl. Add 1 tbsp sesame oil, 1 tsp mushroom seasoning, 1 tsp seasoning sauce. Mix well and keep in refrigerator for 1 hour before cooking.
- 2.Using a large non-stick wok, bring vegetable oil to hot over medium heat. Add minced garlic, ginger and cook to golden brown. Add onion and cook for 1-2 minutes.
- 3.Add ground turkey or ground pork. Use fork to spread meat apart. Cook for 2-3 minutes. Transfer meat to a large bowl. Set aside.
- 4.Using same wok, bring oil to hot over medium heat. Add minced garlic and cook to golden brown. Mix in shredded green and red cabbage. Slowly add to taste: mushroom soy sauce, 1 tbsp sesame oil, dark soy sauce, seasoning sauce, oyster sauce, pinch of sugar. Mix well and cook with cover on for 1-2 minutes.
- 5.Break egg in middle of mixed cabbage. Readd partially cooked meat. Mix well and cook for another 1-2 minutes with cover on. Remove from heat.
- 6.Ready to serve egg roll in a bowl topped with fried onions, chopped scallion, black pepper, bean sprouts and cilantro.
