INGREDIENTS
- 8-12 eggs, hard boiled & finely chopped
- 1 stalk celery, finely chopped
- 2 tbsp onion, finely chopped
- 1/2 cup mayonnaise or more to taste
- 1 tbsp Dijon mustard
- 1/2 tsp poppy seeds
- 1 tsp celery seeds
- 1/4 tsp white pepper
- 1 cup sour cream
- 1/2 small purple onion
- Scallions for garnish
- Crackers
DIRECTIONS
- Combine eggs, celery, and onion. Stir in mayonaise, Dijon mustard, poppy seeds, celery seeds and white pepper. Shape into a flat circle (not a ball), refrigerate overnight. Drain if necessary.
- Cover with chopped purple onion and top with sour cream.
- Garnish with scallions.
- Serve with crackers.
