Bruschetta

Barbara's favorite appetizer!

INGREDIENTS
  • 1 loaf French bread, sliced thin
  • 16 oz homemade bruschetta (see below for recipe)
  • 1/2 cup Parmesan cheese, shredded

DIRECTIONS

  1. 1.
    Preheat oven to 350 degrees.
  2. 2.
    Angular slice French bread into thin slices and place on a large cookie sheet.
  3. 3.
    Toast bread for 2 minutes, remove and flip pieces.
  4. 4.
    Spread homemade bruschetta on slices and sprinkle Parmesan cheese generously on each piece.
  5. 5.
    Return pan to oven and toast for 10 minutes or until Parmesan cheese is melted. Ready to serve.
Homemade Bruschetta
INGREDIENTS
  • 4 large hot house or 6 large Roma tomatoes, diced
  • 1/3 cup basil leaves, chopped
  • 1 Tbsp minced garlic
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

  1. 1.
    Mix all ingredients together and marinade overnight.
