INGREDIENTS
- 1 can of black beans (drained)
- 1 package of frozen white “shoe peg” corn (baby), thawed. If not thawed it’ll just be a little wet on the bottom
- 1 red pepper, chopped
- 1/2 red onion, chopped
- 1/3 cup cilantro, chopped
- 1/4 cup olive or vegetable oil
- 1/3 cup apple cider vinegar
- 2 tsp cumin
- 1 tsp garlic powder
- Salt and pepper to taste
- Scoops or tortilla chips
DIRECTIONS
- Mix all ingredients together and refrigerate.
- Serve with Scoops or tortilla chips.
