INGREDIENTS
- 1 package frozen broccoli
- 3 cups cheddar cheese, shredded
- 2/3 cup onion, diced
- 1 1/3 cups milk
- 3/4 cup Bisquick mix
- 3 eggs
- 1/4 tsp salt
- 1/8 tsp black pepper
- Butter for pan
DIRECTIONS
- Defrost, rinse and drain broccoli; squeeze excess water and let sit for 2 hours until water has completely drained.
- Preheat oven to 400 degrees.
- Lightly grease a 10-inch pie plate.
- Mix broccoli, onions and 2 cups cheese in bottom of the pie plate. Spread evenly.
- In a separate bowl, beat the eggs, salt, and pepper together; stir in milk.
- Add the Bisquick, and whisk until you form a smooth mixture.
- Pour the Bisquick mixture over the broccoli.
- Bake for 35 minutes. Check for doneness by poking the center with a toothpick. It if comes out clean, the quiche is done!
- Put remaining cheese on top and bake for 3 minutes.
- Let the quiche cool on a wire rack for 15 minutes.
- Slice and serve warm.
