Bellini’s Mushroom Chicken

INGREDIENTS
  • 4 boneless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 tsp garlic powder
  • 1 tbsp dried minced onion
  • 1/2 tbsp dried minced garlic
  • 1 tsp onion powder
  • 1/4 tsp black pepper
  • 1/2 tbsp mushroom seasoning
  • 1 tsp chicken bouillon seasoning powder
  • 1 tbsp sesame oil
  • 2 tbsp olive oil
  • Chopped scallion (garnish)

DIRECTIONS

  1. 1.
    Clean chicken with cold water. Cut off all fat excess. Cut chicken into 2" chunks. Use a meat tenderizer to flatten chicken into thin pieces (1/2" thickness).
  2. 2.
    Place chicken into a large mixing bowl. Add sesame oil, olive oil, black pepper, chicken bouillon seasoning powder, garlic powder, onion powder, mushroom seasoning, minced onion, minced garlic, fresh parsley. Mix well. Marinate chicken for at least 4 hours or overnight. in refrigerator.

    Using a large frying pan. Add butter over medium heat. When butter melted, add minced garlic and cook until golden brown.
  4. 4.
    Add marinated chicken. Cook for 3 minutes on each side until golden brown. Remove chicken from stove. set aside.
  5. 5.
    Make Creamy Cheese Sauce (see below directions)

    Make Stir-Fry Mushrooms (see below directions)
  7. 7.
    Serve chicken over linguini (cook al dente). Pour cream cheese sauce over noodles. Add stir-fry mushroom. Sprinkle chopped scallion over top of noodle for garnish.
Creamy Cheese Sauce
INGREDIENTS
  • 1 pint (2 cups) heavy whip cream
  • 1/2 cup Parmesan cheese, grated
  • 2 tbsp salted butter
  • 2 tsp fresh parsley, diced
  • 1/8 tsp Merlot salt
  • 1/4 tsp black pepper
  • 1/2 cup Parmesan cheese, shredded
  • 1 tsp mushroom seasoning
  • 2 cloves of fresh garlic, minced

DIRECTIONS

  1. 1.
    Using a small pot, add butter, cook over low heat When butter is melted, add minced garlic. Cook until garlic is golden brown.
  2. 2.
    Add heavy whip cream. Whisk cream to mix with butter for 2 minutes.
  3. 3.
    Add grated Parmesan cheese, diced fresh parsley, Merlot salt, black pepper. Whisk sauce for another 2 minutes until sauce thickened. Remove sauce from stove to cool.
Stir-Fry Mushrooms
INGREDIENTS
  • 12 oz mushroom (sliced)
  • 2 shallot onions, chopped
  • 1 tsp diced fresh parsley
  • 2 cloves fresh garlic, minced
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 2 tbsp salted butter
  • 1/2 tsp mushroom seasoning

DIRECTIONS

  1. 1.
    Using a small frying pan, bring over medium heat. Add butter. When butter is melted, add minced garlic and cook until golden brown. Add chopped shallot onions and fry for 1 minute.
  2. 2.
    Add mushroom. Cook for another 1 minute. Stir frequently.
  3. 3.
    Add minced fresh parsley, merlot salt, onion powder, garlic powder, mushroom seasoning. Stir mushroom for another 1 minute. Remove from stove.
