Barbara’s Hassleback Potatoes

INGREDIENTS
  • 4 small baking potatoes
  • 1/2 tsp garlic or fresh garlic clove, minced
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 sprigs rosemary, chopped
  • 2 tbsp olive oil

DIRECTIONS

  1. 1.
    Preheat oven to 425 degrees.
  2. 2.
    Peel potatoes. Slice bottom of potatoes so they stand without rolling. Cut each potato not quite through in a series of crosswise slices about 1/4-inch apart or closer so that they are still joined together at the bottom.
  3. 3.
    Sprinkle with garlic, salt, pepper and rosemary.
  4. 4.
    Drizzle with olive oil.
  5. 5.
    Bake for 45 minutes or until tender.
  6. 6.
    Optional: sprinkle with Parmesan cheese when cooked.
