Bacon Biscuit Cups

INGREDIENTS
  • 2 x 3 oz packages cream cheese, softened
  • 2 tbsp milk
  • 1 large egg
  • 1/2 cup (2 oz) Swiss cheese, shredded
  • 1 green onion, chopped
  • 1 (10 oz) can refrigerated flaky biscuits
  • 5 bacon slices, cooked and crumbled
  • Green onions, sliced (garnish)

DIRECTIONS

    Preheat oven to 375 degrees.
  2. 2.
    Beat cream cheese, milk and egg at medium speed with an electric mixer until blended. Stir in cheese and green onion. Set aside.
  3. 3.
    Separate biscuits into 10 portions. Pat each portion into a 5" circle. Press on bottom and up sides of greased muffin cups, forming a 1/4" edge.
  4. 4.
    Sprinkle evenly with half of bacon, and spoon cream cheese mixture evenly on top.
  5. 5.
    Bake biscuit cups for 22 minutes or until set. Sprinkle with remaining bacon.
