INGREDIENTS
- 2 tbsp Olive oil, divided
- 1 tbsp garlic, minced
- 1 small sweet onion
- 2 oz pancetta, diced
- 2 large boneless chicken breasts, chopped into bite size pieces
- 5 oz package Boursin Garlic and Herb Cheese
- 1 pint heavy or whipping cream
- 1/4 cup chicken broth
- 1/2 cup Parmesan Cheese
- 8 ounces (1/2 bag) spinach
- 16 oz box spaghetti noodles, cooked
DIRECTIONS
- 1.Saute garlic, onion and pancetta in 1 tbsp Olive oil; set aside.
- 2.Saute chicken in 1 tbsp Olive oil until cooked through; add pancetta mixture to chicken.
- 3.Add Boursin cheese, cream, chicken broth and Parmesan cheese; stir gently until Boursin and Parmesan are completely dissolved.
- 4.Add spinach and cook until just wilted. Serve over spaghetti noodles.
- 5.Options: (1) if a thinner sauce is preferred, add additional chicken broth. (2) bacon can be substituted for pancetta
