Creamy Chicken Boursin

INGREDIENTS
  • 2 tbsp Olive oil, divided
  • 1 tbsp garlic, minced
  • 1 small sweet onion
  • 2 oz pancetta, diced
  • 2 large boneless chicken breasts, chopped into bite size pieces
  • 5 oz package Boursin Garlic and Herb Cheese
  • 1 pint heavy or whipping cream
  • 1/4 cup chicken broth
  • 1/2 cup Parmesan Cheese
  • 8 ounces (1/2 bag) spinach
  • 16 oz box spaghetti noodles, cooked

DIRECTIONS

  1. 1.
    Saute garlic, onion and pancetta in 1 tbsp Olive oil; set aside.
  2. 2.
    Saute chicken in 1 tbsp Olive oil until cooked through; add pancetta mixture to chicken.
  3. 3.
    Add Boursin cheese, cream, chicken broth and Parmesan cheese; stir gently until Boursin and Parmesan are completely dissolved.
  4. 4.
    Add spinach and cook until just wilted. Serve over spaghetti noodles.
  5. 5.
    Options: (1) if a thinner sauce is preferred, add additional chicken broth. (2) bacon can be substituted for pancetta
