Caramel Fish Sauce

A dipping sauce to serve over fried chicken, fish or Vietnamese lemongrass beef sandwiches.

INGREDIENTS
  • 1 large garlic clove, peeled and minced
  • 2/3 cup sugar
  • 1/3 cup fish sauce
  • 2 tsp crushed red pepper

DIRECTIONS

  1. 1.
    Using a small bowl, add minced garlic to 1/3 cup of hot water and soak for 5 minutes
  2. 2.
    Using a non-stick saucepan, heat over high heat and add sugar. Cook sugar for approximately 30 seconds without burning. Remove pan from heat.

    Add garlic water mixture from Step 1, fish sauce and red pepper flakes. Stir well to combine.
  4. 4.
    Place saucepan back over high heat and bring mixture to boil while stir frequently until all sugar dissolved. Remove saucepan from heat to cook before using.
