Mini Egg Frittatas

INGREDIENTS
  • 1 cup fresh broccoli, chopped
  • 2 cups spinach, chopped
  • 1 red onion, sliced
  • 1 yellow or red pepper, chopped
  • 1/2 cup Mozzarella cheese, shedded
  • 1 cup cottage cheese
  • 1 dozen eggs, beat
  • Pinch of salt
  • Pinch of black pepper
  • 1/2 lb bacon, cooked and cut into small pieces
  • 1/2 lb sweet sausage, cooked

DIRECTIONS

    Chop broccoli, spinach and red/yellow pepper.
  2. 2.
    Slice red onion.
  3. 3.
    Whisk eggs well in a large bowl with salt and black pepper.
  4. 4.
    Add cottage cheese to eggs and mix well.
  5. 5.
    Cook bacon over stove top until crispy. Cut into small pieces.
  6. 6.
    Cook sausage over medium heat. Use forks to break sausages into small pieces.
  7. 7.
    Preheat oven in baking mode for 350 degrees.

    Spray the wells of muffin tin with cooking spray. Fill each well up to 3/4 way up with chopped broccoli, spinach, red/yellow pepper, bacon, sausage, egg mixture. Top each well with spread of Mozzarella cheese.

    Bake egg muffins in oven for about 25 minutes. Test doneness using a toothpick. Ready to serve.
