Muffin Tin Cheesy Garlic Potatoes

INGREDIENTS
  • 6 potatoes
  • 6 tbsp salted butter
  • 4 garlic cloves, finely chopped
  • 3 twigs fresh rosemary, finely chopped
  • 1/2 tsp black pepper
  • 2 tsp garlic, minced
  • 1/2 cup Parmesan cheese, shredded

DIRECTIONS

  1. 1.
    Preheat oven to 350 degrees.

    Cut each potato into small pieces.
  3. 3.
    Using a large mixing bowl, mix cut potatoes, minced garlic, chopped rosemary, black pepper.
  4. 4.
    In a small pan, melt butter and fresh chopped garlic until golden brown. Add garlic butter to mixing bowl with potato and mix well.
  5. 5.
    Fill each muffin space of pan with mixed potato and stand each pieces so you'll have individual servings.

    Bake potato for 50 minutes, add Parmesan cheese and bake for 5 minutes more. Remove from heat and serve while hot.
