INGREDIENTS
- 1 lb lobster meat
- 1/4 cup mayonnaise
- 1/2 red onion, finely chopped
- 1/2 lemon, zest and juice
- 1/2 tbsp fresh parsley, finely chopped
- 1/8 tsp black pepper
- 1/2 tbsp fresh chives, finely chopped
- 1 tbsp fresh cilantro, finely chopped
- 2-4 hot dog buns
- 4 tbsp salted butter, divided
- Chopped scallion (garnish)
DIRECTIONS
- Using a small bowl, mix mayonnaise, red onion, lemon zest, lemon juice, chopped parsley, chopped chives, chopped cilantro, black pepper. Set aside.
- In a small sauce pan, melt 2 tbsp salted butter over low heat. Add lobster meat into butter and warm it for 2-3 minutes (Careful not to over cook).
- Add spices/herbs from Step 1. Mix well with lobster meat. Set aside.
- In a separate frying pan, melt remaining butter. Cook hot dog buns in butter until golden brown on both sides.
- Serve lobster meat in buns. Sprinkle with chopped scallion, black pepper and lemon as needed.
