Keto Strawberry Cheesecake

INGREDIENTS
  • 2 cups heavy cream
  • 8 oz cream cheese
  • 1/2 cup low calorie sweetener or powdered sugar
  • 2 tbsp lemon juice, divided
  • 2 cups strawberries, sliced
  • 1 packet sugar or low calorie sweetener

DIRECTIONS

  1. 1.
    Pour heavy cream into a large mixing bowl. Using a hand-mixer, beat heavy cream for 2 minutes or until thicken.

    Add cream cheese and powdered sugar. Continue to beat with hand-mixer on high.
  3. 3.
    Add 1 tbsp lemon juice. Continue to beat with hand-mixer on high until very firm. Set aside.
  4. 4.
    Place strawberries into a large bowl. Add 1 packet sugar and remainder of lemon juice. Mash strawberries well using a fork.
  5. 5.
    Transfer 1 heaping tbsp of strawberry mixture into 4 cups. Add cream cheese mixture into cups. Pour remaining strawberry mixture on top of cream cheese mixture in each cup.

    Refrigerate until ready to serve.
