Bertucci’s Sausage Soup

INGREDIENTS
  • 1 package of fresh spinach (16 oz)
  • 1 lb ground sweet Italian sausage
  • 1 cup fresh tomatoes, diced
  • 2 large cans (28 oz) crushed tomatoes
  • 2 sweet onion, saute
  • 4 large chicken broth (32 oz)
  • 1 can (oz) diced tomatoes
  • 1/2 tbsp fresh garlic, diced
  • Fresh sage (amount usage to taste)
  • Optional: shredded Parmesan cheese

DIRECTIONS

    Using a non-stick pan, heat up olive oil over medium heat. Add diced garlic and cook until golden brown. Add ground sausage and cook until it turns brown.

    Open the cans of chicken broth and empty into a stew pot and put the pot on low to simmer.
  3. 3.
    Chop and saute the onion.
  4. 4.
    Empty cooked ground sausage and saute onion into the stew pot. Bring to boil then turn heat to low to simmer.

    Add dice tomatoes, crushed tomatoes to broth. Put the whole leaf fresh sage in the soup, using as much or as little as you like. For just a hint of sage favor, use 4 or 5 leaves

    Let simmer for approximately 2 hours on low heat.
  7. 7.
    Wash the spinach and tear up into small pieces, removing the stems before you put it in the pot. Cook for another 30 minutes. Ready to serve. Optionally sprinkle shredded Parmesan cheese over soup.
