INGREDIENTS
  • 8-12 eggs, hard boiled & finely chopped
  • 1 stalk celery, finely chopped
  • 2 tbsp onion, finely chopped
  • 1/2 cup mayonnaise or more to taste
  • 1 tbsp Dijon mustard
  • 1/2 tsp poppy seeds
  • 1 tsp celery seeds
  • 1/4 tsp white pepper
  • 1 cup sour cream
  • 1/2 small purple onion
  • Scallions for garnish
  • Crackers

DIRECTIONS

  1. 1.
    Combine eggs, celery, and onion. Stir in mayonaise, Dijon mustard, poppy seeds, celery seeds and white pepper. Shape into a flat circle (not a ball), refrigerate overnight. Drain if necessary.

    Cover with chopped purple onion and top with sour cream.

    Garnish with scallions.

    Serve with crackers.
