Black Bean Salad with Cilantro Vinaigrette

INGREDIENTS
  • 1 can of black beans (drained)
  • 1 package of frozen white “shoe peg” corn (baby), thawed. If not thawed it’ll just be a little wet on the bottom
  • 1 red pepper, chopped
  • 1/2 red onion, chopped
  • 1/3 cup cilantro, chopped
  • 1/4 cup olive or vegetable oil
  • 1/3 cup apple cider vinegar
  • 2 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Scoops or tortilla chips

DIRECTIONS

    Mix all ingredients together and refrigerate.

    Serve with Scoops or tortilla chips.
